Diran Basmadjian, The Art of Modeling in Science and Engineering,
Chapman & Hall / CRC, 1999.
This is the big book of modeling. This might be too big and expensive
for a textbook for a class, but might be useful as a supplemental reference.
The sheer size of the book is impressive.

This text is for upper level students (Junior or above) and has a wide variety of topics. The last chapter is on report writing, which would be helpful for a project driven course.

This is an upper level text for at least sophomores, but more likely juniors and higher. There is a fairly large list of topics including stochastic models, ODE, and even PDE models.
